Chef’s Knife
A multipurpose cutting tool with a broad, tapered blade typically 8 to 10 inches long, designed for chopping, slicing, dicing, and mincing. The curved edge allows for a rocking motion while cutting, promoting efficiency and precision. High-carbon stainless steel blades maintain sharpness and resist corrosion, while full-tang construction ensures balance and durability. Proper technique, grip, and maintenance are essential for safety and performance.
Hone the blade before each use with a honing rod to maintain edge alignment.
Invest in periodic professional sharpening for optimal cutting performance.
Use a pinch grip: thumb and forefinger on blade sides for control and balance.
Keep knives separate from other utensils to prevent damage to the edge.
Always cut on a sturdy wooden or plastic cutting board to preserve sharpness.

Pricier doesn't always mean better, for the average home cook it doesn't have to be fancy. I have used the same Victorinox knife (about $30 to $40 now) recommended by America's Test Kitchen for at least 14 years and no other knife has stood up to the Victorinox.
