Season
Season
- Seasoning means adding ingredients (primarily salt and pepper) to enhance and bring out natural flavors in food. "Season to taste" means adjusting seasoning according to personal preference after tasting the dish. The goal isn't to make food taste salty, but to brighten and intensify existing flavors.
Start with less seasoning and build up gradually - you can always add more.
Season in layers throughout cooking, not just at the end.
Taste before adding salt, especially with pre-seasoned ingredients or stocks.
Use kosher salt for most cooking as it's easier to control than table salts.
Balance salt with acid (lemon, vinegar) and consider other flavor enhancers like herbs and spices.
