Scaling a recipe up or down significantly? The recipe ingredients, process, cost, and nutrition scale (notes and faqs do not). Check yourself before you wreck yourself:

  • Tiny amounts get tricky. Very small quantities of yeast, baking powder, baking soda, and spices are easier to measure by volume (teaspoons) than by weight – your average kitchen scale can't reliably read tenths of an ounce.

  • Check your equipment. Make sure your bowls, pans, and mixer can handle the scaled volume. Dough typically needs 2 to 3 times its starting volume of space to rise comfortably.

  • Cook times don't always scale. Some steps – like cooking pieces one at a time in a skillet – take proportionally longer with a bigger batch. Others, like oven baking, usually stay about the same.

  • Hydration can drift. Flour absorbency varies, so very small or very large batches may need a splash more or less water than the math suggests.

What if I don’t have an air fryer?

Your oven works just fine. Preheat to 450°F with a rack one notch above the middle – higher placement means crispier tots – then spread the seasoned tots in a single layer on a sheet pan and bake for about 20 minutes, tossing once halfway. They won’t be quite as shatter-crisp as the air-fryer version, but they get remarkably close.

Are these the same as Taco Time Mexi-Fries?

They’re an homage, not a leaked recipe. Mexi-Fries are seasoned tater tots, and this version gets to the same place with a homemade Mexican Seasoning Blend plus chicken bouillon powder – the savory, salty depth is what makes them taste like the drive-through original. Same spirit, made at home for a fraction of the price, and you control the seasoning level.

Why chicken bouillon powder? Can I skip it?

The bouillon is the secret ingredient. It’s concentrated savory – salt, chicken fat, and umami in powder form – and a small amount gives the tots a rich, rounded, fried-food depth that spices alone can’t reach. Skip it and you’ll still have nicely seasoned tots; include it and they taste like Mexi-Fries. You will miss it if it’s gone.

Can I make these vegetarian?

Yes – the chicken bouillon is the only non-vegetarian ingredient. Swap it for an equal amount of vegetable bouillon powder (or a vegetarian “chicken-style” bouillon, which keeps more of the savory character) and everything else is plant-based. As always with frozen products, give the tot bag’s label a quick scan.

Why aren’t my tots crispy?

Crowding is almost always the culprit. Tots crisp in a single layer with air moving around them – a packed basket steams them instead. Make sure the air fryer is fully preheated, give the tots room, toss at the 5-minute mark, and don’t skimp on the oil spray; the oil is what fries the seasoning into a crust. Cooking a double batch? Work in rounds rather than piling the basket.

Does this seasoning work on fries or other frozen potatoes?

Beautifully. Crinkle-cut fries, waffle fries, steak fries, even hash brown patties – the same oil-then-seasoning toss works on any frozen potato product. Follow the package’s time and temperature for whatever shape you’re using, and toss once midway so the seasoning distributes evenly.
